Mill & Crumb is a family-run bakery café — flour on the apron, coffee on the go, and neighbours who know our names.
Since opening
Mill & Crumb began when the Hart family outgrew their kitchen table. Early mornings of sourdough starters and weekend pastry trays turned into a shop on Mill Lane — still small, still family-led, still baking before the city wakes.
We keep the craft open: dough mixed on site, coffee pulled at the bar, and a terrace for when the Hertfordshire light is soft and peachy. No chain playbook — just honest bread and a welcome that lasts longer than a takeaway cup.
How we bake
We favour British flour where we can, local dairy for the pastry bench, and a single-origin coffee roasted in small batches nearby. The oven sets the pace — not the other way around.
You’ll usually find a Hart behind the counter or in the bakehouse. Recipes travel by notebook and muscle memory — adjusted for the day’s humidity, not a spreadsheet.
Sit in or take away. We serve coffee, tea and bakery food — never alcohol — so the room stays easy for families, remote workers and anyone who just needs a warm corner.
